Who is ready for a fresh spin on roasted carrots?

ingredients:

One bunch carrots

2-3 TBS Olive Oil

2-3 TBS Fig Vinegar

1/4 cup Goat Cheese

1/4 cup Pomegranate Seeds

Sea Salt

directions:

1.) Preheat oven to 400º

2.) Wash and dry carrots and place them in a single layer in a Pyrex dish. I do not peel them because I like the rustic look they have when roasted with the skin on. Drizzle with olive oil and fig vinegar and turn to coat. Sprinkle with Sea Salt.

4.) Roast for 25 minutes, turn carrots, and roast for 10-15 minutes more until soft.

5.) Transfer to a platter and sprinkle first with Goat Cheese and then with Pomegranate Seeds.

Serve immediately
